Tuna Tartare

Avocado and Wonton Chips

Sesame Ginger Vinaigrette

Method

Tuna Tartare Preparation

  1. 1

    Prepare the Tuna

Dice the sushi-grade tuna into small cubes and place it in a bowl.

  2. 2

    Add Vegetables

Finely chop the green onions and jalapeño pepper. Add them to the bowl with the tuna.

  3. 3

    Season

Add soy sauce, sesame oil, lime juice, salt, and black pepper to the bowl. Mix well to combine.

Avocado and Wonton Chips Preparation

  1. 4

    Prepare the Wonton Chips

Heat vegetable oil in a deep frying pan over medium heat. Cut the wonton wrappers into triangles.

  2. 5

    Fry the Wontons

Once the oil is hot, fry the wonton triangles in batches until golden and crispy, about 1-2 minutes. Drain on paper towels and sprinkle with salt.

  3. 6

    Prepare the Avocado

Slice the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash slightly with a fork and season with salt to taste.

Sesame Ginger Vinaigrette Preparation

  1. 7

    Mix the Vinaigrette

In a small bowl, whisk together fresh ginger, sesame oil, soy sauce, rice vinegar, and honey until well combined.

Assembly

  1. 8

    Assemble the Dish

On a serving plate, spread a layer of the avocado mash. Top with the tuna tartare and drizzle with sesame ginger vinaigrette. Serve with wonton chips on the side.
