Prepare Dates
Preheat your oven to 400°F (200°C). Slice each Medjool date lengthwise and remove the pit. Fill each date with approximately 1/3 ounce of goat cheese.

Wrap in Bacon
Take one slice of bacon and wrap it around each stuffed date, securing it with a toothpick if necessary. Ensure that the ends of the bacon are tucked underneath the date to prevent unwrapping during cooking.

Bake Dates
Place the bacon-wrapped dates on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and golden brown, turning them halfway through for even cooking.

Make Gastrique
In a saucepan, combine sherry vinegar, granulated sugar, and water. Bring to a simmer over medium heat, stirring until the sugar has dissolved. Reduce the heat to low and continue to simmer until the mixture thickens and coats the back of a spoon, about 15-20 minutes. Remove from heat and let cool slightly.

Once the bacon-wrapped dates are done, remove them from the oven and let them cool for a couple of minutes. Drizzle the sherry gastrique over the dates and serve warm.
