Method

Prepare the Sofrito

    Sauté the Base

    In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5-7 minutes.

    Add Garlic and Harissa

    Stir in the minced garlic and harissa paste. Cook for another 2 minutes until fragrant.

    Incorporate Tomatoes

    Pour in the crushed tomatoes, add salt and pepper. Stir well and bring to a simmer, cooking for 10 minutes until slightly thickened.

Cook the Eggs and Prepare Toppings

    Add Mushrooms

    Add sliced oyster mushrooms to the sofrito mixture and cook for 5 minutes until they soften.

    Add Chickpeas

    Stir in the marinated chickpeas and let them warm through for about 3-5 minutes.

    Poach the Eggs

    Make small wells in the mixture and crack the eggs into each well. Cover the skillet and let the eggs poach for 5-7 minutes until the whites are set but the yolks are still runny.

    Garnish

    Once cooked, sprinkle with chopped cilantro and crumbled feta cheese.

Serve with Barbari Bread

    Serve the shakshuka hot with pieces of barbari bread on the side for dipping.
