Preparation

    Prepare the Seafood

    Rinse the shrimp, clams, and mussels under cold water. Set aside to drain.

    Cook the Chorizo

    Slice the chorizo into thin rounds. In a large paella pan or skillet, heat a little oil over medium heat and add the chorizo. Cook for about 3-4 minutes until it starts to release its oil and is browned.

    Prepare the Sofrito

    Add the sofrito to the pan with the chorizo and cook for another 5 minutes, stirring frequently until the mixture is fragrant.

Cooking

    Add the Rice

    Stir in the bomba rice, ensuring it is well coated with the sofrito and chorizo mixture. Cook for 2 minutes to toast the rice slightly.

    Add the Liquid

    Pour in 1 liter of water (or seafood stock for more flavor) and bring to a simmer. Season with salt and pepper to taste. Let it cook uncovered for about 10 minutes.

    Add the Seafood

    Arrange the shrimp, clams, and mussels on top of the rice. Press them gently into the rice. Cover the pan with a lid or aluminum foil and cook for another 10-12 minutes until the seafood is cooked through and the rice has absorbed the liquid.

Finishing Touch

    Rest the Paella

    Once the seafood is cooked, remove the pan from heat and let it rest for 5 minutes. This allows the flavors to meld.

    Serve

    Serve the paella warm, drizzled with garlic aioli on top. Enjoy!
