Vodka Infusion

    Infuse the Vodka

    In a clean glass jar, combine the bare bone vodka and fresh rosemary sprigs. Seal the jar tightly and let it sit in a cool, dark place for at least 48 hours, shaking gently once a day to mix the flavors.

    Prepare the Cocktail

    After the vodka has infused, strain out the rosemary using a fine mesh sieve. In a cocktail shaker, add 50 ml of the infused vodka, fresh blackberries, fresh lemon juice, and rhubarb bitters. Muddle the ingredients together gently to release the blackberry juices.

    Shake and Serve

    Fill the shaker with ice and shake vigorously for about 15 seconds. Strain the mixture into a chilled cocktail glass, filling it halfway.

    Add the Prosecco

    Top off the cocktail with 120 ml of prosecco for a refreshing fizz. Garnish with a few whole blackberries and a sprig of rosemary.
