Polenta

    Prepare the Polenta

    In a large saucepan, bring 4 cups of water to a boil. Once boiling, gradually whisk in the polenta and continue whisking to prevent lumps.

    Cook the Polenta

    Reduce the heat to low and cook the polenta for about 20-25 minutes, stirring frequently until thick and creamy. Stir in the butter, grated Parmesan cheese, and salt until melted and well combined.

    Keep Warm

    Cover the polenta and keep it warm on low heat while you prepare the shrimp and sauce.

Shrimp and Sauce

    Prepare the Shrimp

    In a bowl, toss the peeled and deveined shrimp with olive oil, minced garlic, salt, and pepper. Let marinate for 10-15 minutes.

    Make the Saffron Sauce

    In a small saucepan, heat the heavy cream over medium heat. Add the saffron threads and lemon juice. Simmer for about 5 minutes until slightly thickened.

    Grill the Shrimp

    Preheat a grill or grill pan over medium-high heat. Grill the marinated shrimp for about 2-3 minutes per side until they turn pink and opaque.

Crispy Garlic and Chive Crema

    Fry the Garlic

    In a small skillet, heat a tablespoon of olive oil over medium heat. Add the sliced garlic and fry until golden and crispy, about 2-3 minutes. Remove and drain on paper towels.

    Prepare the Chive Crema

    In a bowl, combine sour cream, chopped chives, and salt. Mix well and set aside.
