Method

Polenta

    Cook the Polenta

    In a large saucepan, bring 4 cups of water to a boil. Add the salt and gradually whisk in the polenta to prevent lumps. Reduce heat to low and cook, stirring frequently, for about 20-25 minutes until thickened.

    Finish the Polenta

    Once the polenta is cooked, stir in the butter and Parmesan cheese until smooth and creamy. Keep warm until serving.

Grilled Shrimp

    Marinate the Prawns

    In a bowl, combine the olive oil, minced garlic, salt, and black pepper. Add the prawns and toss to coat. Let them marinate for 15 minutes.

    Grill the Prawns

    Preheat the grill to medium-high heat. Grill the prawns for about 2-3 minutes on each side until they are opaque and slightly charred. Remove from heat.

Saffron Bilbaína Sauce

    Prepare the Sauce

    In a saucepan, combine the white wine, chicken broth, and saffron threads. Bring to a simmer and reduce by half.

    Finish the Sauce

    Stir in the heavy cream and butter. Cook for an additional 5 minutes until the sauce thickens slightly. Season with salt to taste.

Crispy Garlic

    Fry the Garlic

    In a small saucepan, heat the olive oil over medium heat. Add the sliced garlic and fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.

Chive Crema

    Mix the Chive Crema

    In a small bowl, combine the sour cream, chopped chives, lemon juice, and salt. Mix well and set aside.
