Method

Preparing the Potatoes

    Peeling and Cutting

    Peel the Yukon Gold potatoes and cut them into 1-inch cubes.

    Soaking

    Soak the potato cubes in cold water for at least 30 minutes to remove excess starch.

    Drying

    Drain the potatoes and pat them dry with a clean kitchen towel.

    Frying

    In a large pot, heat the olive oil over medium-high heat. Once hot, add the potatoes in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt and black pepper while hot.

Making the Bravas Sauce

    Heating Oil

    In a saucepan, heat 2 tablespoons of olive oil over medium heat.

    Cooking Garlic

    Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

    Adding Spices

    Stir in smoked paprika and red chili flakes; cook for another 30 seconds.

    Adding Tomato Paste

    Add tomato paste and stir to combine, cooking for about 2 minutes.

    Adding Broth

    Pour in vegetable broth, salt, and sugar. Bring to a simmer and cook for about 5 minutes until slightly thickened. Adjust seasoning if necessary.

Preparing the Onion Yogurt

    Mixing Ingredients

    In a bowl, combine Greek yogurt, finely chopped red onion, lemon juice, and salt to taste. Mix well until smooth.

Serving

    Plating

    Serve the crispy fried potatoes on a platter, drizzled generously with the bravas sauce and a dollop of onion yogurt on the side.
