Preparing the Potatoes

Drain and Dry
After soaking, drain the potatoes and pat them dry with a clean kitchen towel. This step is crucial for achieving crispiness.

Fry the Potatoes
In a deep frying pan or pot, heat 2 cups of olive oil over medium-high heat. Once the oil is hot, carefully add the potatoes in batches. Fry them for about 5-7 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels. Season with salt immediately while hot.

Add Tomato Paste and Spices
Stir in the tomato paste, smoked paprika, chili powder, and red pepper flakes. Cook for another 1-2 minutes until the mixture is well combined and slightly darkened.

Simmer Sauce
Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 10 minutes, stirring occasionally. Season with salt and black pepper to taste.
