Preparing the Bread

Grill the Sourdough
Heat a grill or grill pan over medium-high heat. Lightly brush one side of each slice of sourdough bread with olive oil. Place the oiled side down on the grill and grill for about 3-4 minutes until golden brown and crispy. Flip and grill the other side for an additional 2-3 minutes.
Preparing the Tomato Mixture

Prepare the Tomatoes
While the bread is grilling, wash the ripe tomatoes. Cut them in half and grate the cut side against a box grater to remove the flesh and juices into a bowl, discarding the skin. You should have a thick, pulpy mixture.

Add Garlic and Seasoning
Mince the garlic clove and add it to the tomato mixture. Drizzle 2 tablespoons of extra virgin olive oil into the bowl and add the sea salt. Mix gently to combine all the ingredients.

Add Fresh Basil (Optional)
If using, tear the fresh basil leaves and add them to the tomato mixture, folding them gently to incorporate.
Assembling the Dish

Top the Grilled Bread
Once the sourdough slices are grilled, remove them from the grill and place them on a serving platter. Spoon the prepared tomato mixture generously over each slice of grilled bread.

Serve Immediately
Drizzle a little more olive oil over the top if desired, and serve immediately while the bread is still warm.
