Roast the mushrooms
Arrange the skewers on a baking sheet and roast in the preheated oven for about 15-20 minutes, or until the mushrooms are tender and slightly golden.

Roast the garlic
Wrap the garlic cloves in aluminum foil and roast them in the oven alongside the mushrooms for about 20 minutes, or until soft and fragrant.

Prepare the tahini
In a blender, combine the roasted garlic (squeezed out of the skins), tahini, lemon juice, water, and salt. Blend until smooth and creamy. Add more water if needed to achieve desired consistency.
Date Syrup

Make the date syrup
In a small saucepan, combine the pitted dates and water. Bring to a boil, then reduce heat and simmer for about 10-15 minutes until the dates are very soft.

Blend into syrup
Remove from heat and let cool slightly. Transfer the mixture to a blender and blend until smooth. If it's too thick, add a bit more water to reach desired syrup consistency.
