Lamb Skewers

Marinate the Lamb
In a large mixing bowl, combine the olive oil, ground cumin, ground coriander, paprika, cinnamon, salt, black pepper, minced garlic, and fresh lemon juice. Add the cubed lamb shoulder to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. After marinating, thread the lamb pieces onto the skewers, leaving a little space between each piece for even cooking.

Preheat your grill or grill pan over medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your preferred doneness.

In a large bowl, add the chopped parsley, cilantro, mint, thinly sliced red onion, halved cherry tomatoes, and diced cucumber.
