    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Chicken and Spices

    Stir in the cubed chicken breast, ground cumin, ground coriander, paprika, salt, and black pepper. Cook until the chicken is browned, about 5 minutes.

    Combine Remaining Ingredients

    Add the canned diced tomatoes, rinsed lentils, and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to low.

    Simmer the Soup

    Cover and let the soup simmer for about 25-30 minutes, or until the lentils and chicken are cooked through.

    Finish with Spinach and Lemon

    Stir in the chopped spinach and lemon juice, cooking for an additional 5 minutes until the spinach is wilted. Adjust seasoning if necessary.

    In a large bowl, combine the cubed bread, olive oil, dried oregano, dried thyme, garlic powder, and salt. Toss until the bread is evenly coated.

    Spread the coated bread cubes in a single layer on a baking sheet. Bake for 15-20 minutes, tossing halfway through, until golden brown and crispy.
