    Marinate the Chicken

    In a bowl, combine the chicken thighs, Moroccan spice blend, olive oil, salt, black pepper, and garlic powder. Mix well to ensure the chicken is evenly coated in the spices. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Cook the Chicken

    Preheat your oven to 200°C (400°F). Place the marinated chicken on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the chicken is cooked through and has a golden-brown exterior. Remove from the oven and let it rest for a few minutes before cutting into bite-sized pieces.

    In a bowl, combine the plain yogurt, chopped mint leaves, lemon juice, and a pinch of salt. Stir until smooth and well combined. Adjust the salt to taste. Cover and refrigerate until ready to serve.

    In a large bowl, combine the shredded cabbage, grated carrot, and thinly sliced red onion. In a small bowl, whisk together the olive oil, apple cider vinegar, and a pinch of salt. Pour the dressing over the cabbage mixture and toss well to combine. Let it sit for at least 10 minutes before serving to allow the flavors to meld.
