Frittata Preparation

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Whisk Eggs

    In a large bowl, whisk together the eggs, salt, and black pepper until well combined.

Ras el Hanout Roasted Carrots

    Prepare Carrots

    Peel and cut the carrots into matchstick-sized pieces.

    Roast Carrots

    Toss the carrots with olive oil and ras el hanout in a baking dish. Roast in the preheated oven for 20-25 minutes until tender and caramelized.

Caramelized Onions

    Slice Onions

    Thinly slice the onions.

    Caramelize Onions

    In a skillet, melt butter over medium heat. Add the sliced onions and sugar. Cook slowly, stirring often, until the onions are golden brown and caramelized, about 15-20 minutes.

Mint Labneh

    Mix Labneh

    In a bowl, combine the labneh, chopped fresh mint, and lemon juice. Mix well and set aside.

Tomato Salad

    Chop Vegetables

    Chop the tomatoes and cucumber into bite-sized pieces.

    Combine Salad

    In a bowl, combine the chopped tomatoes and cucumber. Drizzle with olive oil, and season with salt and black pepper to taste. Toss gently.

Frittata Assembly

    Combine Ingredients

    In a large mixing bowl, combine the roasted carrots, caramelized onions, and crumbled feta cheese. Stir to combine.

    Cook Frittata

    Pour the egg mixture over the combined ingredients in an oven-safe skillet. Cook on the stovetop over medium heat for about 5 minutes until the edges begin to set.

    Transfer the skillet to the preheated oven and bake for 15-20 minutes until the frittata is set in the center.

Serving
