Roasted Shallot Vinaigrette
Salad Preparation
1. Prepare the Salad Base
Wash and dry the local lettuce thoroughly. Tear the lettuce into bite-sized pieces and place in a large salad bowl.
2. Slice the Vegetables
Thinly slice the Persian cucumber and cut the heirloom tomatoes into wedges. Add both to the bowl with the lettuce.
3. Add Olives and Cheese
Pit and chop the black olives, then add them to the salad bowl. Crumble the ricotta salata over the top of the salad.
Vinaigrette Preparation
4. Roast the Shallots
Preheat the oven to 400°F (200°C). Peel and halve the shallots, then place them on a baking sheet. Drizzle with a little olive oil and roast for about 15-20 minutes until caramelized and soft.
5. Make the Vinaigrette
In a small bowl, combine the roasted shallots, olive oil, red wine vinegar, honey, salt, and black pepper. Whisk together until well combined.
Combine and Serve
6. Dress the Salad
Pour the vinaigrette over the salad and toss gently to combine all ingredients thoroughly.
7. Serve
Serve the Mediterranean salad immediately, garnishing with additional ricotta salata if desired.
