Method

Preparing the Skewers

    Marinate the Lamb

    Cut the lamb shoulder into bite-sized cubes. In a large bowl, combine the lamb cubes with berbere spice mix, olive oil, salt, and black pepper. Mix well to coat the lamb evenly. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

    Skewer the Lamb

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece.

Making the Whipped Labneh

    Prepare Labneh

    In a mixing bowl, combine labneh, minced garlic clove, lemon juice, and salt. Whip together until smooth and creamy. Drizzle with olive oil before serving.

Preparing Mint and Sumac Onions

    Prepare the Onions

    Thinly slice the red onion and place it in a bowl. Sprinkle with sumac and salt, and drizzle with olive oil. Toss to combine. Let it sit for at least 10 minutes to allow the flavors to meld.

    Add Mint

    Just before serving, add chopped fresh mint leaves to the onion mixture and toss gently.

Cooking the Skewers

    Grill the Skewers

    Preheat your grill to medium-high heat. Grill the skewers for 10-12 minutes, turning occasionally until the lamb is cooked to your desired level of doneness.
