    Prepare the Harissa Hollandaise

    In a bowl, whisk together the egg yolks and lemon juice until pale and frothy. Slowly drizzle in melted butter while constantly whisking until the sauce thickens. Stir in harissa and season with salt to taste.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide the eggs into the simmering water. Poach for about 3-4 minutes or until the whites are set but yolks remain runny. Remove with a slotted spoon and drain on a paper towel.

    Toast the English Muffins

    Split the English muffins and toast them until golden brown. Place two halves on each plate.

    Assemble the Benedict

    Layer two slices of jamon serrano on each toasted muffin half. Top each with a poached egg and drizzle with harissa hollandaise sauce.

    Peel and dice the potatoes into small cubes. Rinse them under cold water and pat dry with a kitchen towel.

    In a large frying pan, heat olive oil over medium heat. Add the diced potatoes and fry until golden and crispy, about 15-20 minutes. Stir occasionally to ensure even cooking.
