Prepare Hummus Base

1. Blend the Ingredients

In a food processor, combine the canned chickpeas (drained and rinsed), tahini, garlic cloves, lemon juice, olive oil, ground cumin, salt, and water. Blend until smooth and creamy. If the mixture is too thick, add more water, a tablespoon at a time, until desired consistency is achieved.

Cook Lamb Topping

2. Sauté the Onions

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

3. Cook the Lamb

Add the ground lamb to the skillet with the onions. Cook until the lamb is browned, breaking it apart with a spatula, about 8-10 minutes.

4. Season the Mixture

Stir in the ground cinnamon, allspice, salt, black pepper, and raisins. Cook for an additional 3-4 minutes until the raisins are plump and the flavors meld together.

Assemble and Serve

5. Plate the Hummus

Spread the prepared hummus into a shallow bowl or plate. Make a small well in the center.

6. Add Lamb Mixture

Spoon the lamb and raisin mixture into the well of the hummus, allowing it to spill a little over the sides.

7. Garnish

Top with thinly sliced radishes, chopped parsley, and toasted pine nuts for extra flavor and crunch. Drizzle a little olive oil on top before serving.

8. Serve

Serve the Hummus Bil Lahme with pita bread or fresh vegetables for dipping.
