Burger Patty

    Prepare the Patty Mix

    In a large bowl, combine ground lamb, minced garlic, cumin, coriander, paprika, salt, and black pepper. Mix well until all ingredients are fully incorporated.

    Form the Patties

    Divide the mixture into four equal portions and form each portion into a patty. Make a slight indentation in the center of each patty to prevent puffing during cooking.

    Cook the Patties

    Heat olive oil in a skillet over medium heat. Add the patties and cook for 4-5 minutes on each side, or until they are cooked to your desired doneness.

Piquillo Pepper Relish

    Mix the Relish

    In a bowl, combine chopped piquillo peppers, red onion, red wine vinegar, olive oil, salt, and black pepper. Stir well and let it sit for at least 10 minutes to allow the flavors to meld.

Zhug Aioli

    Prepare the Aioli

    In a bowl, whisk together chopped cilantro, chopped parsley, minced garlic, lemon juice, mayonnaise, cumin, and salt until smooth. Refrigerate until ready to use.

Sumac Onions

    Prepare the Onions

    In a bowl, combine thinly sliced red onions, sumac, salt, and water. Let it soak for about 15 minutes to soften and pickle the onions slightly.

Burger Assembly

    Assemble the Burger

    On each burger bun, place a lettuce leaf, followed by a cooked lamb patty, a slice of tomato, a generous spoonful of piquillo pepper relish, and a drizzle of zhug aioli. Top with sumac onions and close the bun.

    Serve the burgers immediately while hot, with your favorite sides.
