For the Grilled Skirt Steak

    Prepare the Marinade

    In a small bowl, mix together the olive oil, salt, black pepper, and garlic powder. Coat the skirt steak with the marinade and let it sit for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to high heat.

    Grill the Steak

    Place the marinated skirt steak on the grill. Grill for about 4-5 minutes on each side for medium rare, or to your desired doneness.

    Rest the Steak

    Remove the steak from the grill and let it rest for at least 5 minutes before slicing.

For the Squash Caponata

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.

    Add the Remaining Vegetables

    Add the zucchini, eggplant, and red bell pepper to the skillet. Cook for about 10-15 minutes until the vegetables are tender.

    Season the Caponata

    Stir in the balsamic vinegar, salt, and black pepper. Cook for an additional 2-3 minutes. Remove from heat and let it cool.

For the Salsa Verde

    Combine the Ingredients

    In a bowl, combine the chopped parsley, chopped basil, chopped capers, lemon juice, and olive oil. Mix well.

    Season the Salsa Verde

    Add salt and black pepper to taste. Adjust seasoning as necessary.
