Marinade

Method

Marinade Preparation

  1. 1

    Mix the Marinade

In a medium bowl, combine the harissa paste, olive oil, lemon juice, minced garlic, salt, and black pepper. Whisk together until well blended.

  2. 2

    Marinate the Chicken

Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight for better flavor.

Grilling

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  2. 4

    Grill the Chicken

Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken thighs skin-side down on the grill. Cook for about 6-7 minutes, then flip and grill for an additional 6-7 minutes, or until the internal temperature reaches 165°F and the skin is crispy.

Serving

  1. 5

    Rest and Serve

Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Serve the grilled chicken garnished with chopped cilantro and lemon wedges on the side.
