Grilled Broccolini

    Prepare the Broccolini

    Rinse the broccolini under cold water and pat dry. Trim any tough ends.

    Season the Broccolini

    In a mixing bowl, toss the broccolini with olive oil, salt, and black pepper until evenly coated.

    Grill the Broccolini

    Preheat the grill to medium-high heat. Place the broccolini on the grill and cook for 4-5 minutes, turning occasionally, until tender and slightly charred. Remove from the grill and set aside.

Ajo Blanco

    Blend the Ajo Blanco

    In a blender, combine the blanched almonds, garlic cloves, stale bread, water, sherry vinegar, olive oil, and salt. Blend until smooth and creamy. Adjust the consistency with more water if needed. Chill in the refrigerator until ready to serve.

Pickled Raisins

    Prepare the Pickling Liquid

    In a small saucepan, combine water, apple cider vinegar, sugar, and salt. Bring to a gentle simmer over medium heat, stirring until the sugar and salt dissolve.

    Pickle the Raisins

    Remove the saucepan from the heat and stir in the raisins. Let them sit in the pickling liquid for at least 30 minutes before serving.

Crushed Almonds

    Crush the Almonds

    Place the blanched almonds in a zip-top bag and use a rolling pin or the bottom of a heavy pan to crush them into small pieces. Set aside for garnish.
