Garlic Confit

Prepare Garlic Confit
In a small saucepan, combine the garlic cloves and olive oil. Add the fresh thyme sprigs and bring to a very gentle simmer over low heat. Cook for about 30-40 minutes until the garlic is tender and lightly golden. Remove from heat and let cool, then transfer to a jar and store in the oil.

Prepare the Shrimp
While the garlic confit is cooling, rinse the shrimp under cold water and pat them dry with paper towels. In a large skillet, add the garlic confit (with the oil) over medium heat. Once hot, add the shrimp, preserved lemon (finely chopped), white wine, salt, and black pepper.

Cook the Shrimp
Sauté the shrimp for about 4-5 minutes, stirring occasionally, until they are pink and opaque. Adjust seasoning if necessary.

Serve
To serve, place the cooked shrimp mixture on a serving platter and drizzle with a little extra garlic confit oil if desired. Serve with warm barbari bread for dipping.
