    Prepare the Filling

    In a large skillet over medium heat, sauté the chopped onion in a tablespoon of vegetable oil until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Mix Ingredients

    In a mixing bowl, combine the sautéed onion and garlic with the shredded chicken, parsley, salt, pepper, and nutmeg. Mix well.

    Make the Roux

    In the same skillet, melt 4 tablespoons of butter over medium heat. Stir in the flour and cook for about 2-3 minutes until it turns light golden brown. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5 minutes.

    Combine and Cool

    Add the chicken mixture to the roux and stir until fully combined. Allow the mixture to cool completely in the refrigerator for about 1 hour.

    Shape the Croquetas

    Once cooled, form the chicken mixture into small oval-shaped balls. Set aside.

    Coat the Croquetas

    In a shallow bowl, beat the eggs. In another bowl, place the breadcrumbs. Dip each croqueta in the egg, then roll in the breadcrumbs until fully coated.

    Fry the Croquetas

    Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the croquetas in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Garlic Aioli

    Mix the Aioli

    In a small bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and pepper. Mix well until smooth.

    Chill

    Cover and refrigerate the garlic aioli for at least 30 minutes to allow the flavors to meld.
