    Prepare the Polenta

    In a large saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt to the boiling water.

    Cook the Polenta

    Gradually whisk in 1 cup of polenta, reducing the heat to low. Stir continuously for about 5-7 minutes until the polenta thickens.

    Finalize the Polenta

    Remove from heat and stir in 2 tablespoons of butter and 1 cup of grated manchego cheese until melted and creamy.

Tomato Gravy

    Sauté the Aromatics

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped medium onion and sauté until translucent, about 5 minutes.

    Add Garlic

    Stir in 3 minced garlic cloves and cook for an additional minute until fragrant.

    Combine with Tomatoes

    Add the 28 oz can of diced tomatoes, 1 tsp of dried oregano, 1 tsp of dried basil, 0.5 tsp of salt, and pepper to taste. Stir well.

    Simmer the Gravy

    Bring the mixture to a simmer and let it cook for about 15-20 minutes, stirring occasionally, until slightly thickened.

    Finish the Gravy

    Stir in 0.25 cup of chopped fresh basil just before serving.
