Hummus Preparation

    Prepare the Chickpeas

    Drain and rinse the canned chickpeas under cold water. Set aside.

    Blend the Hummus

    In a food processor, combine the chickpeas, tahini, lemon juice, garlic, olive oil, ground cumin, salt, and water. Blend until smooth and creamy, scraping down the sides as needed.

    Adjust Consistency

    If the hummus is too thick, add a bit more water, one tablespoon at a time, until you reach your desired consistency.

    Taste and Adjust

    Taste the hummus and adjust seasoning with more salt or lemon juice if desired. Transfer to a serving bowl.

Zhug Preparation

    Prepare the Ingredients

    Wash the cilantro and parsley thoroughly. Remove the stems from the cilantro and parsley and chop roughly.

    Blend the Zhug

    In a food processor, combine the cilantro, parsley, jalapeño, garlic, ground cumin, olive oil, salt, and lemon juice. Blend until smooth.

    Taste and Adjust

    Taste the zhug and adjust the seasoning if necessary. Transfer to a small bowl or jar.

Pita Bread Preparation

    Warm the Pita

    If desired, warm the pita bread by placing it in a dry skillet over medium heat for 1-2 minutes on each side, or wrap in aluminum foil and heat in a 350°F (175°C) oven for about 5 minutes.
