    Preheat the oven

    Preheat your oven to 325°F (165°C).

    Mix crust ingredients

    In a mixing bowl, combine the graham cracker crumbs, granulated sugar, melted unsalted butter, and salt. Mix until well combined and crumbly.

    Form the crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer.

    Bake the crust

    Bake the crust in the preheated oven for 10 minutes, then remove and let it cool while preparing the filling.

Filling

    Prepare the filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue to beat until fully incorporated.

    Add remaining ingredients

    Add the sour cream, vanilla extract, eggs one at a time, and lemon juice. Mix on low speed until just combined, being careful not to overmix.

    Pour filling into crust

    Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.

    Bake the cheesecake

    Bake in the oven at 325°F (165°C) for about 50-60 minutes, or until the edges are set and the center is slightly jiggly.

    Cool the cheesecake

    Turn off the oven and crack the door open, allowing the cheesecake to cool gradually for about 1 hour in the oven.

    Chill in the refrigerator

    Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.
