Preparing the Octopus

Clean and Tenderize
Clean the octopus thoroughly under cold running water. If the octopus is not pre-tenderized, you can tenderize it by freezing it overnight and then thawing it before cooking.

Boil the Octopus
Bring a large pot of salted water (with 2 tablespoons of salt) to a boil. Add the whole octopus and simmer for about 45-60 minutes, or until tender. Once cooked, remove the octopus from the pot and let it cool slightly.

Making the Brown Butter Tahini Sauce

Brown the Butter
In a small saucepan, melt the butter over medium heat. Continue to cook, stirring frequently, until the butter turns golden brown and develops a nutty aroma, about 5-7 minutes. Remove from heat immediately to prevent burning.

Mix the Sauce
In a mixing bowl, combine the browned butter, tahini, lemon juice, minced garlic, and salt. Gradually whisk in water until the desired consistency is achieved.
