Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Remove the leaves and stem from the cauliflower head and cut it into bite-sized florets.

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper. Gradually add in the water and stir until a smooth batter forms.

Coat the Cauliflower
Dip each cauliflower floret into the batter, ensuring it is well-coated. Shake off any excess batter.

Bake the Cauliflower
Line a baking sheet with parchment paper and drizzle with olive oil. Place the coated cauliflower florets on the baking sheet in a single layer. Bake for 25-30 minutes or until they are golden brown and crispy, flipping halfway through.

Prepare the Aioli
In a small bowl, combine the mayonnaise, sriracha sauce, minced garlic, and lemon juice. Stir until all ingredients are well mixed.

Taste the aioli and add salt to your preference. Mix well and set aside until ready to serve.
