    Cook the Quinoa

    Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine rinsed quinoa with 2 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    Chop the Vegetables

    While the quinoa is cooking, chop 1 large cucumber, 1 medium avocado, and 1 cup of cherry tomatoes into bite-sized pieces. Place them in a large mixing bowl.

    Combine Ingredients

    Add the cooked quinoa, 1 cup of fresh basil, 1 cup of fresh mint, and 1 cup of cilantro to the bowl with the chopped vegetables. Gently toss everything together until well combined.

Dressing

    Prepare the Dressing

    In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 teaspoon of honey, 1 teaspoon of salt, and 1 teaspoon of black pepper until well combined.

    Drizzle the dressing over the quinoa and vegetable mixture. Toss gently to coat all ingredients evenly with the dressing.

    Transfer the salad to a serving dish or individual bowls. Optionally, garnish with additional fresh herbs or a sprinkle of feta cheese if desired. Enjoy immediately!
