    Prepare the Oven

    Preheat your oven to 400°F (200°C).

    Blend the Base

    In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.

    Add the Eggs

    Add the eggs one at a time, mixing well after each addition until fully incorporated.

    Incorporate Manchego

    Fold in the grated manchego cheese, vanilla extract, and heavy cream until combined.

    Finish with Flour

    Finally, add the flour and mix gently until just combined.

    Bake the Cheesecake

    Pour the cheesecake mixture into a greased 9-inch springform pan and bake for 35-40 minutes, or until the top is golden brown and the center is set but still slightly jiggly.

    Cool and Chill

    Remove the cheesecake from the oven and let it cool at room temperature for about 1 hour. Then refrigerate for at least 4 hours or overnight before serving.

Berry Preparation

    Prepare the Berries

    In a medium bowl, combine the mixed berries, sugar, and lemon juice.

    Macerate the Berries

    Gently toss the berries and let them sit for at least 30 minutes at room temperature to macerate, allowing the sugar to draw out the juices.

    Once the cheesecake has set, slice it and serve with the macerated berries spooned over the top.
