Prepare the Rice
In a saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it cool.

Mix the Filling
In a large bowl, combine the cooled rice, chopped onion, parsley, dill, 2 tablespoons of olive oil, salt, pepper, and lemon juice. Mix well to combine all ingredients.

Prepare the Grape Leaves
If using jarred grape leaves, rinse them under cold water to remove excess salt and carefully separate them. If using fresh leaves, blanch them in boiling water for a few minutes until soft.

Stuff the Grape Leaves
Place a grape leaf, vein side up, on a clean surface. Add about 1 tablespoon of the rice filling near the stem end. Fold the sides over the filling and roll tightly from the stem end to the tip. Repeat with remaining leaves and filling.

Serve
Once cooked, let them cool slightly before serving. Serve warm or at room temperature with lemon wedges.
