Includes lamb chops, kofta kabob (grilled ground beef & lamb), shish kabob (meat & vegetables skewer), chicken kabob, lamb & beef shawarma (spit-roasted beef & lamb), chicken shawarma (spit-roasted chicken), and BBQ chicken. Served with falafel (chickpea fritters), rice, salad, pita bread, hot sauce, tahini sauce (w/ ground sesame seeds), and garlic sauce.

Preparation

    Marinate Meats

    Marinate the lamb chops, ground beef, ground lamb, chicken breast, beef and lamb shawarma with your favorite spices (such as cumin, paprika, garlic powder, and salt) and let sit for at least 1 hour.

    Prepare Skewers

    Form the ground beef and lamb mixture into kebab shapes and thread onto skewers. Cut chicken breast into cubes for chicken kabobs and thread onto separate skewers.

Cooking

    Grill Meats

    Preheat the grill and grill the marinated meats (lamb chops, kebabs, chicken) until cooked through and have nice grill marks, about 10-15 minutes for the chops and kebabs, and 12-20 minutes for chicken depending on thickness.

    Cook Shawarma

    If using a shawarma spit, layer the shawarma meats and cook until the outside is crispy and the inside is juicy. Alternatively, you can roast the meats in an oven at 375°F (190°C) for 30-40 minutes.

    Fry Falafel

    Fry the falafel in hot oil until golden brown and crispy, about 5-7 minutes.

    Cook Rice

    In a pot, cook basmati rice according to package instructions.

Assembly

    Plate the Meat Platter

    Arrange the grilled meats, falafel, rice, salad, and pita bread on a large platter. Serve with hot sauce, tahini sauce, and garlic sauce on the side.
