Preparing the Falafel

    Soak Chickpeas

    Place dried chickpeas in a bowl and cover with water. Soak overnight or for at least 8 hours.

    Make the Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, salt, and pepper. Pulse until a coarse mixture forms. Add flour and pulse until combined.

    Form Fritters

    Take small amounts of the mixture and form into balls or patties about 1-2 inches in diameter.

    Fry the Falafel

    In a deep frying pan, heat oil over medium-high heat. Fry the fritters in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

    Warm the pita bread in a separate oven or skillet. Arrange the falafel fritters on a platter alongside the pita, hot sauce, and tahini sauce.
