Preparation Steps

    Prepare the Filling

    In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent.

    Cook the Rice

    Add the long-grain rice to the skillet and stir for a few minutes until slightly toasted. Add vegetable broth or water, salt, black pepper, lemon juice, parsley, and dill. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until rice is cooked. Remove from heat and let cool.

    Stuff the Grape Leaves

    Carefully remove grape leaves from the jar and rinse in cold water. Lay a grape leaf flat, stem side towards you. Place about 1-2 tablespoons of the rice mixture at the base of the leaf, fold in the sides, and roll tightly. Repeat until all leaves and filling are used.

    Cook the Dolmas

    Place the stuffed grape leaves seam-side down in a large pot. Add enough water to cover them and a splash of olive oil. Place a plate on top to keep them submerged. Bring to a boil, then reduce heat and simmer for 30-40 minutes.

    Serve

    Remove dolmas from the pot and serve warm with pita bread, hot sauce, and tahini sauce on the side.
