Prepare the Nut Filling
In a bowl, combine the chopped walnuts, chopped pistachios, granulated sugar, and ground cinnamon. Mix well and set aside.

Prepare the Filo Pastry
Preheat your oven to 350°F (175°C). Melt the unsalted butter in a saucepan. Unroll the filo pastry and cover with a damp cloth to prevent drying out.

Layer the Pastry
Brush a 9x13 inch baking dish with melted butter. Place one sheet of filo pastry in the dish and brush with butter. Repeat until you have 8 sheets layered. Sprinkle a thin layer of the nut mixture over the pastry. Continue layering 4 more sheets of filo, brushing each with butter, followed by another layer of nuts. Repeat until all the nuts are used, ending with 8 sheets of filo layered on top, brushing each with butter.

Cut the Baklava
Using a sharp knife, cut the layered pastry into diamond or square shapes.

Bake the Baklava
Bake in the preheated oven for about 45-50 minutes or until golden brown.

Soak the Baklava
Once the baklava is done baking, remove it from the oven and immediately pour the honey syrup evenly over the hot baklava. Allow it to soak and cool for at least 4 hours or overnight.
