Directions for Preparing Baba Ghannouj

Roast the Eggplant
Preheat your oven to 400°F (200°C). Cut the eggplants in half lengthwise and place them cut-side down on a baking sheet. Roast for about 30-40 minutes until the skin is charred and the flesh is soft.

Prepare the Dip
Once the eggplants are roasted and cooled, scoop out the flesh and place it in a food processor. Add tahini, garlic, lemon juice, olive oil, salt, and ground cumin. Blend until smooth and creamy.

Taste and Adjust
Taste the baba ghannouj and adjust seasoning as needed, adding more salt or lemon juice if desired.

Serve
Transfer the baba ghannouj to a serving dish. Drizzle with olive oil and sprinkle with chopped fresh parsley. Serve with warm pita bread and your choice of hot sauce.
