Preparation and Cooking

Marinate the Lamb

In a large bowl, combine Greek yogurt, minced garlic, grated ginger, ground cumin, ground coriander, turmeric powder, garam masala, red chili powder, salt, and lemon juice. Mix well to create a marinade. Add the lamb leg to the bowl, ensuring it is well coated with the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.

Preheat the Oven

Preheat your oven to 180°C (350°F) while the lamb is marinating.

Roasting the Lamb

Remove the lamb from the refrigerator and let it sit at room temperature for 30 minutes. Place the lamb in a roasting pan and drizzle with olive oil. Roast in the preheated oven for about 2 to 2.5 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare, or longer if desired.

Resting

Once cooked, remove the lamb from the oven and let it rest for 15-20 minutes before carving.

Serve

Carve the lamb and serve on a large platter, garnished with chopped fresh coriander. Accompany with naan bread or rice for a complete feast.
