Prepare the Home Fries
Begin by washing and dicing the potatoes into small cubes. In a skillet over medium-high heat, add a tablespoon of oil and the diced potatoes. Cook until golden brown and crispy, stirring occasionally. Season with salt and pepper to taste.

Make the Béchamel Sauce
In a small saucepan, melt the butter over medium heat. Add the flour and whisk for about 1-2 minutes to create a roux. Gradually whisk in the milk, stirring constantly, until the sauce thickens. Season with salt, pepper, and nutmeg (if using). Stir in half of the cheddar cheese until melted and smooth.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide them into the water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon.

Assemble The Cheesy Rider
Toast the Texas toast slices until golden brown. On each slice, layer the cooked sausage, then top with a poached egg. Drizzle the béchamel sauce over the top and sprinkle with the remaining cheddar cheese. Serve with home fries on the side.
