    Prepare the Home Fries

    Dice the potatoes into small cubes. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden and crispy, about 10-12 minutes. Set aside.

    Cook the Chorizo

    In the same skillet, add the chorizo and cook until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.

    Scramble the Eggs

    In a bowl, whisk the eggs with a pinch of salt and pepper. In the skillet, add remaining olive oil and pour the eggs in. Stir gently over medium heat until just set, about 3-4 minutes.

    Make the Avocado Cream

    In a small bowl, mash the avocado and add a pinch of salt, mixing until creamy. Set aside.

    Prepare the Red Pepper Puree

    Roast the red bell pepper until charred, remove the skin and seeds, and blend with a little olive oil and salt until smooth.

    Assemble the Burrito

    On a tortilla wrap, layer black bean puree, cooked chorizo, scrambled eggs, home fries, cheddar cheese, and avocado cream. Roll tightly, tucking in the sides as you go.

    Slice the burrito in half and drizzle with red pepper puree before serving.
