    Prepare Home Fryz

    Dice the potatoes into small cubes. Heat olive oil in a skillet over medium heat, add the potatoes, paprika, and salt. Cook until golden and crispy, about 15-20 minutes, stirring occasionally.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the water. Poach for about 3-4 minutes or until white is set and yolk is still runny. Remove with a slotted spoon.

    Make Hollandaise Sauce

    In a heatproof bowl, whisk egg yolks and lemon juice together. Melt butter and gradually whisk into the yolk mixture until smooth. Season with salt and cayenne pepper.

    Assemble the Dish

    On a plate, layer the crispy falafel, sliced tomato, and avocado. Top with the poached eggs. Drizzle with hollandaise sauce and serve alongside home fryz.
