Poach the Catfish
In a pot, bring water to a simmer. Add the catfish fillets and poach for about 10 minutes or until cooked through. Remove from water and let cool. Flake into small pieces.

Prepare the Filling
In a mixing bowl, combine the flaked catfish, cream cheese, chopped green onions, minced garlic, grated ginger, soy sauce, salt, and black pepper. Mix until well combined.

Assemble the Wontons
Place a teaspoon of filling in the center of each wonton wrapper. Moisten the edges with water, fold over to create a triangle, and press to seal. You can also crimp the edges with a fork for extra security.

Cook the Wontons
Bring a pot of water to a boil. Carefully drop in the wontons and cook for about 4-5 minutes or until they float to the top. Remove with a slotted spoon and drain.

Serve with Sweet Chili Oil
Drizzle sweet chili oil over the wontons before serving. Enjoy!
