Prepare the Home Fries
Peel and dice the potatoes into small cubes. In a large skillet, heat a tablespoon of oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook until golden brown and crispy, about 15-20 minutes, stirring occasionally.

Make the Béchamel Sauce
In a saucepan, melt the butter over medium heat. Add the flour and stir continuously for about 2 minutes to create a roux. Gradually whisk in the milk, and continue to whisk until the sauce thickens. Season with salt and pepper. Remove from heat and stir in half of the cheddar cheese until melted.

Assemble the Sandwich
On a slice of Texas toast, layer the pulled pork, scrambled eggs, and crispy home fries. Top with the remaining cheddar cheese and another slice of Texas toast. Repeat for the second sandwich.

Serve
Remove the sandwiches from the skillet, slice them in half, and drizzle the béchamel sauce over the top. Serve hot and enjoy!
