    Cook the Potatoes

    Wash and peel the potatoes. Cut them into bite-sized pieces and place them in a large pot. Cover with water, add a pinch of salt, and bring to a boil. Cook for about 10-15 minutes or until fork-tender. Drain and let them cool.

    Cook the Bacon

    In a skillet, cook the bacon over medium heat until crispy. Remove from the skillet and place on paper towels to drain excess grease. Once cooled, crumble into small pieces.

    Prepare the Dressing

    In a large mixing bowl, combine sour cream, mayonnaise, Dijon mustard, salt, and pepper. Mix well until smooth.

    Add the cooled potatoes, crumbled bacon, cheddar cheese, and chopped green onions to the mixing bowl with the dressing. Gently fold the ingredients together until well combined.
