Burger Preparation

Prepare the Pork Belly
In a pan, cook the pork belly over medium heat until crispy. Add blueberries and cook until they break down and infuse the pork belly. Set aside.

Cook the Shrimp Slaw
Toss shrimp in blackening seasoning. In a skillet, heat olive oil over medium-high heat and cook shrimp for about 2-3 minutes per side or until cooked through. In a bowl, combine cooked shrimp with shredded cabbage, salt, and pepper to make the slaw.

Form and Cook the Burger Patty
Form the ground Angus chuck brisket into two patties. Season with salt and pepper. Grill or cook in a skillet over medium-high heat for about 4-5 minutes on each side or until desired doneness. Place a slice of pepper jack cheese on each patty during the last minute of cooking to melt.

Assemble the Burger
Toast the brioche buns. On the bottom bun, place the cheeseburger patty, followed by the bluesberry infused pork belly, a generous scoop of blackened shrimp slaw, and drizzle with smoked bluesberry chipotle BBQ sauce. Top with the other half of the brioche bun.
