Cooking Instructions

  1. 1

    Prepare the Black-eyed Peas

If using dried black-eyed peas, soak them overnight in water. Drain and rinse before cooking.

  2. 2

    Sauté Aromatics

In a cast iron skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.

  3. 3

    Add Ingredients

Add the soaked black-eyed peas, vegetable broth, bay leaves, thyme, cayenne pepper, salt, and black pepper to the skillet. Stir to combine.

  4. 4

    Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 45 minutes to 1 hour, or until the peas are tender.

  5. 5

    Final Seasoning

Taste and adjust the seasoning with additional salt and pepper as needed. Remove the bay leaves before serving.

  6. 6

    Serve

Serve the black-eyed peas warm as a side dish or a hearty main dish.
