    Prepare the Bacon

    In a skillet over medium heat, cook the applewood bacon until crispy. Remove and let drain on paper towels.

    Sauté the Mushrooms

    In the same skillet, add sliced mushrooms and sauté until golden brown, about 5-7 minutes. Season with salt and pepper.

    Form the Patties

    In a bowl, season the ground Angus chuck brisket with salt and pepper. Form into two equal patties, making a slight indentation in the center.

    Cook the Patties

    Heat the grill or a skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness.

    Add Cheese

    In the last minute of cooking, place a slice of Swiss cheese on each patty and cover until melted.

    Assemble the Burger

    On the bottom half of each brioche bun, layer lettuce, tomato slices, the cooked patty with melted cheese, sautéed mushrooms, bacon, onion slices, and pickles. Top with the other half of the bun.

    Serve immediately with your choice of sides.
