    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.

    Combine Wet Ingredients

    In another bowl, combine the oil, eggs, and vanilla extract. Mix well.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

    Add Carrots and Pecans

    Fold in the grated carrots and chopped pecans until evenly distributed.

    Bake the Cake

    Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

    Cool the Cakes

    Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

    In a large bowl, beat the cream cheese and butter together until smooth and creamy.

    Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.

Assemble the Cake

    Frost the Cake

    Once the cakes are completely cool, place one layer on a serving plate and spread a layer of cream cheese buttercream on top. Place the second layer on top and frost the top and sides of the cake with the remaining buttercream.

    Garnish

    Garnish the top of the cake with additional chopped pecans if desired.
