Prepare the Potatoes
Peel and cut the potatoes into thin strips. Soak them in cold water for 30 minutes to remove excess starch.

Fry the Potatoes
Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, then toss with grated Parmesan cheese.

Make the Béarnaise Sauce
In a saucepan, combine white wine vinegar and fresh herbs. Heat until reduced by half. In a bowl, whisk the egg yolks until frothy. Slowly whisk in the warm vinegar reduction and place the bowl over a pot of simmering water. Gradually add melted butter while whisking until the sauce thickens. Season with salt and pepper.

Slice the steak and serve with parmesan frites and béarnaise sauce on the side.
